Common Oak - Burgundy Truffle

The classic oak tree of NZ parks and large gardens.  Tolerant of a wide range of sites, great in the wind.  Deciduous.  Hardy. Inoculated with the Burgundy Truffle (Tuber astevium).

Tuber aestivum and T. uncinatum, Summer truffle and Burgundy Truffle, are one and the same species. They grow mainly on oak trees and can be found from late Spring until Autumn. Excellent gastronomic qualities and used fresh in haute cuisine, but can also be bottled. Intensive aroma with a taste reminiscent of hazelnut. Much easier to grow than Black Truffle (T. melanosporum).
